– This is a simple appetizer that can be whipped up in minutes with a bit of softened cream cheese, and tastes great on crackers or pretzels. If you’re expecting company and you don’t want to spend a whole lot of time or prep on an appetizer, this one is perfect! First, take 8 ounces of softened cream cheese and place it into a bowl. Add chopped scallions, a quarter cup of finely chopped red pepper, 2 tablespoons of diced jalapeño, a half teaspoon of Worcestershire, a quarter teaspoon of garlic powder, 2 and a half teaspoons of ranch seasoning, and a half cup of shredded cheddar cheese to the cream cheese and fold until combined. In another bowl, combine some chopped jalapeno, crumbled bacon, pecan pieces or pecan meal, and chopped scallions, and roll the cream cheese mixture into this mixture into a ball shape. Simply serve on a plate with crackers and you have a picture perfect app!
2. Red Pepper Pecan Dip– This dip is great with chips, crackers, and even fresh veggies, and it can be made in just a few minutes for those unexpected guests. Take your pecan halves or pecan pieces and place into a food processor with a half cup of crumbled feta, a half cup of roasted red pepper, 1 clove of garlic, a quarter teaspoon of Worcestershire sauce, a quarter teaspoon of smoked paprika, and a dash of salt and pepper to taste. Mix until smooth and serve with your chosen accompaniments!
3. Healthy Pecan Poppers – While they take a bit more prep, healthy pecan poppers are sure to be a big hit. Finely grind pecan pieces into a flour in a food processor, and mix with brown rice flour in a large bowl. Season the flour mixture with salt, pepper, paprika, and garlic powder, then add water to create a batter-like consistency. Toss cauliflower florets into the batter and mix until completely coated, then sprinkle with salt and bake on parchment paper at 425 degrees F for around 15 minutes, flip, and then another 10 minutes. The poppers can be served with ranch, salsa, marinara, or any sauce you love. 4. Pecan Deviled Eggs– Deviled eggs are an appetizer staple, and pecans turn them into something brand new.
